both PE r210 and PE r320 are entry level rack server under PE line. I never have any of these servers. Well, my office administrator may have some of these to run dhcp, AD etc...
r210 doesn't even support hot swapable disks, is it? Actually, even for r320, you could purchase it without hot swappable disk bays.
ram can be purchased anyway as long as they are compatible, no hurt to check dell for dell certified ram. are both 210 and 320 single socket? if so, you don't need to check numa
As for disks, check if there is a perc controller, if so make sure it supports ssd.
There will be no problem to mix ssd with traditional hdd, as long as they have the same interface such as sata or sas.
if you ask my advice, I would you you should buy new servers instead. it's kind of wasting your effort on upgrading these two machines since they are not built for heavy duty work anyway...
